Gluten-Free Blog consolidation

Gluten-Free Blog consolidation

I have decided to consolidate my various gluten-free blog postings. From now on, all my primary celiac and gluten-free recipes, foods, diet, news, science, lifestyle, product reviews, and so forth will appear on my main gluten-free blog.

That blog is primarily a "gluten-free foodie blog", as a bulk of my postings have to do with gluten-free baking and recipes. There is also plenty of discussion about the latest GF science for celiacs and some general discussion about related topics.

I will still be covering gluten-free desserts, since that is, of course, a favorite topic of mine.

Gluten Free Desserts Book to Arrive end of November, 2006

The latest gluten-free desserts book is nearly done at the printing company, and the estimated time of arrival is the end of November - around Thanksgiving time. Gluten Free / Wheat Free Cream Puffs - part two

Last month I posted a note about the wonderful GF / WF cream puffs that my daughter made, and promised a link to a picture of them once I had it available and online.

Well, here is the a picture of the gluten-free cream puffs.

They really are as good as they look. Although the picture shows an almond-whipped-cream center filling, I personally prefer them with chocolate pudding or vanilla pudding in the middle (or similar custard filling). The recipe is now in the book, which is off to print and should be ready by November 2006.

The more time that passes, the more I am convinced I am not missing out on very much with desserts. Even wheat-free and gluten-free desserts can rival ANY "normal" dessert. It just takes time, patience, and a lot of trial-and-error to get the recipes right. But, in the end, it is worth it, especially when you have had a craving for GF Cream Puffs for quite some time!

Gluten-Free Cream Puffs

One dessert I thought I would never eat after adopting the Celiac / Gluten-Free lifestyle: Cream Puffs! But, things change. My daughter has outdone herself again with dogged determination, and created a perfect GF Cream Puff! Tenacity has its rewards, and I just consumed one of them myself. These things were so good, I did a last minute recipe substitution in my new Gluten-Free Desserts Book, inserting this recipe and deleting one I found a bit less challenging and unique.

There is a bit of technique to getting the proper moisture level in the cream puff dough / batter in order to get them to "puff" like they are supposed to. But, in the end, these things puffed a full 1.5 inches high, and left a nice hollow into which the cream, pudding, or custard is piped. The texture and taste was wonderful, and convinced some non-celiacs quickly. I will put a link to the picture of the final product soon, but I have a bit more work to do to get this recipe book to the printers by the end of the month.
